Wonderful looking recipe.
I am growing my own potato, the white (you call them "Irish"), some Red (skins are red, but almost the same white potato), and Peruvian Purple, with Purple Skin, Purple Inside!

Growing your potatoes? That's great to hear. Sweet potatoes can be white or red but Irish potatoes here are usually white in colour

These are all potato I have grown and harvested:
All are potato, not sweet potato (which are actually not true potato, but same family as the Morning Glory flower!) All ahve whitish flesh inside, except for the dark purple.
