Made with Love and Extra Ginger: No More Boring Fried Fish for Mommy F -I Made Her Escabeche with Turmeric and Carrot

Mommy F really prefer fried fish over fish soup recipe. She likes it but still easily get tired of it, complaining left and right, lol. I understand Mommy F though especially Fish is the only thing she can eat. Chicken? It makes her itchy all over. Pork? Not really good for someone who's blood go woosh, whoosh. So the only thing that is good for her is either vegetable or fish, or both. And today's no difference because Mommy F started to complain again about how boring fried fish is. And so, I promised her that I will make something about the boring leftover fried fish, something better.

And because she just had Fish Soup, I decided to make Escabeche. I usually don't put Carrot when I make Escabeche but this time, I put just one. It would be awesome if there's bell pepper as well but she only gave me 20 pesos so that's not enough to buy the ingredients I need, lol. Actually, thats the only amount I asked because I am sure too that she won't spend too much for bell pepper that is really expensive here. And so, me and mama made a quick visit in the market to buy ingredients. We also stop by in one bakery to buy bread for snack later.

After arriving home, I immediately prepared all the thing I need for this recipe. I only bought Carrot and Ginger in the market, 11 php for Carrot and 4 php for the Ginger. There's still 5 peso change, haha. I happily handed the change to Mommy F, hehe. And these are the ingredients needed here. Most of them are still available at home so we didn't have to spend much. So we have carrot, the two fried fish head, onion, ginger, turmeric powder, vinegar, pepper, salt, MSG, cooking oil and water.

I cut the ginger into strip, the carrot into round flat, and the onions lile that on the photo, hehe. Some actually cut their current into thin strip as well but I prefer cutting it this way because I am the cook and this is the easiest way to cut it. And for sure Mommy F would like it this way too. Ehe

Si next is sauteeing the ginger and onion, sadly we don't have garlic this time, I forgot to buy ಥ⁠‿⁠ಥ. This is what it is when you're trentahin or in your 30s, the forgetfulness become too severe. How I wish I can also forget my embarassing moments with this forgetfulness, aigoooo

After a minute of tossing and turning, I then added the carrot together with the turmeric, salt, msg and ground pepper. Why? Just because. Like, what's the difference if I would put the seasonings and spices later? Better put it now and be merry

Next is putting cup of water in it, I also put the leftover fried fish and simmer it until the carrot soften. I mean, even half cook of it would be good. But well, follow your heart and the man you love

Five minutes later and it's done! Now we have this healthy and bright Escabeche made withove and care using our gas stove. Its not much, a simple dish actually, but, Mommy F love it. She's happy that its no more boring fried fish...

And the next she'll proceed having fried fish again because that's how she wants it. Aigoooo. I guess I need to think of any other recipe using fried fish. Any suggestion guys? Cheaper and easy to make recipe would be good and really aprpeciated \⁠(⁠^⁠o⁠^⁠)⁠/

I get her, if someone isn't really knowledgeable about how to cook this dish, it'd turn too fishy, you know the after taste? so yeah, ginger is a good idea, and im glad you added a little vinegar so food do not get spoilt faster, with this kind of weather, ang bilis masira ng food.

Also, it is easy to grow peppers, try growing it in your garden, maybe in less than 2 or 3 months, marami ka ng bell peppers 🫑

Yesss, vinegar really helps talaga, if we want to last dish for a few days, thats the answer. Pero ang dami talagang use ng suka no, kahit sa dami pwede daw yan eh pampawala naman ng BO

Yong samin, nagabloom naman sya, then bubunga but after a few days, idadrop nya yong bunga nya. According to google gawa daw sa weather kaya ganyan

Yes, thats why I used it for Mom's legs. Though di naman sya na inaatake ng rayuma, it is still better to give it to her. It also have other benefits diba. Hehe
