We also had a healthy breakfast for today. Egg omelet with bitter gourd and white onions. The bitter gourd was freshly picked from our small backyard. Also, there is eggplant so I just fried it for our breakfast for today.

You just sauté the white onions first, then add the bitter gourd, then add the beaten egg. It looks like pizza after adding the eggs, haha. In every Filipino breakfast, eggs were really common, it may be boiled or fried. It can also be added to many dishes just like what I cooked today. Eggs is a must in every breakfast, I guess. hehe We enjoyed our breakfast today because aside from the vegetables that was freshly picked at our backyard, our son was enjoying his time eating the breakfast I prepared today.

Add the papaya when the meat is already tender then add the seasonings, and patis or salt to taste. Cooked the “tinola” until the papaya is already soft. You can add more vegetables to this dish like moringa leaves, bitter gourd leaves and chili leaves.
