This article clearly highlights the dual value of microgreens: as a superfood and as an entrepreneurial opportunity. I swear it's the first time I've heard the word microgreens, and now I understand that they are the young sprouts of vegetables, herbs, or grains harvested a few days after germination, when they've already developed their first green leaves.
