Though pickles are only a side dish, it takes a prime position in lunch recipes, in our places. You can call it a nostalgia, most houses prepare them at their homes giving an exotic flavour. A most popular side dish with Plain rice, gruel and Biriyani's for lunch box, weddings and other functions.

So today let's go for a raw mango pickle. This was just the final mangoes in our tree probably for this year.

INGREDIENTS REQUIRED

1 Raw Mangoes- 5 Nos.
2 Salt
3 Turmeric - 1/2tsp

REQUIRED SPICES

  1. Garlic - 1 pod or more
  2. Sesame oil - 3 tbsp
  3. Mustard seed (whole) - 1 tsp
  4. Mustard seed (powdered)- 1 tbsp
  5. Fenugreek seed (powdered) - 1/2 tsp
  6. Asafoetida - 1/2tsp
  7. Chilli flakes - 2 tsp
  8. Chilli powder - 3 tbsp
  9. Curry leaves - a handfull

PREPARATION METHOD

Wash the mangoes in warm water and drain them, by keeping them in a strainer. Let it get dried completely.

Now cut them into small pieces, along with the skin. Along with it add some salt and keep it under direct sun for atleast an hour or so.

Note : At present, we have rainy season and no chances of sunlight. But yesterday it was not cloudy and so was able to place the mangoes under direct sunlight for 45 minutes.

Now,, take a thick bottomed vessel. Add sesame oil, to it add mustard seeds and curry leaves. Let it splutter. Now add the garlic to it.

Once it turns brown, add Chilli powder and turmeric powder to it.

After one minute of stirring in oil, add mangoes.

Now stir all these for just one minute and switch off the flame. Gradually, add fenugreek powder, Asafoetida powder, crushed red pepper and crushed mustard seeds. Once again mix everything well.

Your pickle is ready to be served with hot rice. Once cooked the aroma just surrounds the kitchen.

Transfer it to an air tight container. For the crispness you can refrigerate the pickle, after three days.
