Today, I stumbled upon @george-dee's inspiring post on vegan potato rolls. Since I already had most of the ingredients at home, apart from spring onion, which I later substituted with cabbage, I decided to give it a try because I also had a little time on my hands.
I must tell you it was worth the try; it's been a long time since I tried something different in the kitchen. Before now I frequently scoured YouTube for new recipes, but I have gotten so busy that I don't try cooking something new again.
Ingredients:
Preparation:
Wash the sweet potato first before peeling the back off.
Then chop the sweet potato into tiny pieces, wash them again before placing them into the pot with little water.
Boil the chopped sweet potatoes on fire until tender.
So while the potatoes were on fire, I simultaneously chopped up the carrots and cabbage.
By this time the potatoes were already very tender; I drained and mashed them.
I poured my chopped cabbage and carrots into the bowl with mashed potatoes and stirred them until it was well incorporated.
I added a pinch of salt to enhance the flavor, together with pepper, garlic, and ginger powder, and I stirred again and kept it aside.
In a bowl I poured my flour, I added baking powder, salt, sugar, and butter with a little water and kneaded until I got a fine dough.
I used my rolling pin to roll it on a flat, clean surface.
Then I cut the flat dough into different smaller pieces, and at one end of it, I put my mixture and folded it.
I repeated the process till I exhausted both the dough and mixture.
Then I placed a pan on the fire (low heat) and added oil to it. When the oil was hot, I placed my potato rolls on it and fried them till they turned brown, and I removed them from the fire.
I didn't have the picture of my sauce because I made it earlier for my daughter to take to school with chips.
My daughter loved it. I make snacks every Friday for her to take to school, so since she loves this, I am going to incorporate this into my menu.
I served this with the fresh orange juice I had in the refrigerator

The quantities of the ingredients used and the portions obtained are essential information in every food post. We don't see this information here, so please edit and include this data.
If you read our community rules, you will see that we ask users, especially if they are new here, to appear cooking their dishes, that is, we want to meet them, see their faces while they prepare their recipes, so in your next posts in this community we hope to see you making your recipes.
