I can't find my name in any of the list, I guess because I'm new. I've made some POB creating contents in weeks. Am I totally out? Or will another snapshot be taken? I think I've made more than 100POB Without buying so far.

If the POB is staked and the stake is up to 100 POB, then you will surely get yours. That's part of the conditions.
So is it over now? Can I still stake to complete 100? Because I think I have 70+ staked .

Sorry, you only had 48 POB staked just after November 12, 2021.
No other snapshot will be taken. However, you can earn early VYB by following @vyb.earn. Take a look at this post
