Happy Thursday! Today, I'm excited to share another delightful lunch prepared by my ever-caring and loving wife. As always, she never fails to impress with her cooking skills and the delicious meals she prepares for us.

For lunch today, we have a Filipino classic: Adobong Manok (Chicken Adobo). This dish is a staple in many Filipino households and for a good reason. The tender chicken pieces are marinated and cooked in a savory mixture of soy sauce, vinegar, garlic, and bay leaves, creating a rich and flavorful sauce that pairs perfectly with steamed white rice.

On my plate, you'll see the beautifully cooked Adobong Manok, which has absorbed all the flavors of the marinade, making each bite a delicious explosion of taste. Alongside the adobo, we have hard-boiled eggs that have been simmered in the same adobo sauce, adding a delightful depth of flavor to the eggs.

Adobo is one of those dishes that gets better the longer it sits, allowing the flavors to meld together even more. My wife’s version is particularly delicious, with the perfect balance of salty, tangy, and savory notes. It's comfort food at its finest, reminding me of home and family with every bite.

I feel incredibly fortunate to have such a wonderful wife who not only takes care of me but also fills our home with the warmth and love that only a home-cooked meal can bring.
