Tortang Dilis for Today's Lunch

Hi Asean Hivers!

Today is another hectic day, and I lack sleep. I've been thinking a lot about important decisions that I need to make and it cost me my sleep, which also made me make some mistakes at work.

Anyway, I just want to relieve myself from stress now and share what we had for our lunch today.

We had tortang dilis or anchovies omelette. We usually buy this from vendors selling around.

It's very easy to cook just like any torta dish.

These photos were taken the other week when we had this same dish, too. Today, it's my eldest son and husband who cooked our meal since I was busy working on my laptop.

TORTANG DILIS RECIPE

So here's the recipe for tortang dilis. In actual, I would just chop and toss whatever ingredient is available.

The level of this dish is very beginner-friendly. Easy and fast to do. Here are the spices we used: tomato, onion, and garlic. Is tomato a spice?

So this was our lunch.

I just want to share as well that I harvested more bell peppers from our backyard since I noticed that some are already ripe.

Can you suggest what dish to prepare with these bell peppers?

At this time, my head is already very heavy. I need to have the lost sleep from last night. But if there's one good thing that is happening now from being sleepless is that I cannot think of that "thing that made me sleepless" anymore because my body is prioritizing and craving for the physical need to sleep. Thanks to God for the way our body and mind adapt to these situations. I now remember Maslow's Heirarchy of needs. And sleep is one of those basic things we must meet first before other things in the heirarchy.

After my sleep later, I want to do some meditation so that I'd clear my mind and see where I want to go with my life. I'll reassess where I am at and where I want to go now at the age of 38.

I missed my Mom when I saw your blog because this is one of her favorites, the "Tortang Dilis". As for me, I love munching dilis and coated dilis, it's just difficult to find anchovies here in the States, even in Asian stores and markets, they are very rare to find. Thank you for this blog; it reminds me of home. 🙂
