I already have the inside of an old water heater, I should paint it black, so that the sun heats the water, I plan to use a hose from the tap to refill the water

Yes, please! We both have the same dream... I'd love to see how you do it and what ideas you have. Painting it black is very beneficial, that way it can warm up better, you're right.
The only thing I'm thinking about with my design is that the water quality needs to be refreshed. I would use water conditioner, what do you think?

Yes, you should have filters and maybe a water softener.
It also depends a lot on the water in the stream.
