I don't know, well, I didn't see anything in those links that would allow you to deploy it elsewhere and link it to some other stable coin. But I only skimmed through it quickly.

It was more about the tokenomics, incentives to hodl, purchases with NOS or USDC (that would be converted into NOS), etc.
They use Solana only for token "hosting", the renting stuff is offchain...
Btw, you can rent whatever you want... if you have a demand for it... :)
