A TASTE OF HOME: Watching my mother cook Biko

Good day, dear hivers! It's @riona09 again, back with another blog! Today, I want to share the unexpected plan of my mother to cook Biko for our meryenda, and how I just stood there and watch as she does her work.

One afternoon, my mother has this random cravings. It was Biko, a traditional Filipino rice cake. I was curious of it was actually cooked so I watched throughout the process and given that I wasn't an expert, I hope you would not expect a perfect narration for this one.

INGREDIENTS: (without exact measurements)
•Glutinous rice
•Water (for cooking the rice)
•Coconut
•Brown sugar
•Banana leaves (optional)

PROCEDURES:

First, my mother washes the glutinous rice and cooked it with water until it becomes soft and sticky.

While waiting for the rice, she then washed the crashed coconut (I don't know how to exactly call it but the coconut was turned into tiny pieces by a tool).

After that, she squeeze it until it turns into a coconut milk, leaving the tiny pieces crashed coconut aside.

Next, she prepares the coconut mixture by heating the coconut milk in a pan with medium heat.

She then adds the brown sugar and a pinch of salt, stirring continuously until the sugar fully dissolves and the mixture thickens slightly.

While waiting, I went outside to get some fresh air and I came across a flower and some chickens so I randomly took a picture of them and I loved how it turned out.

After, I went back inside only to find out that my mother is already finished. I couldn't capture how she add the coconut mixture to the already cooked glutinous rice and add some peanuts on top of it.

So, forgive me if I could only provide a picture of me savoring the Biko in my plate, hehe.

It was so delicious, though everything my mother cooks, it was all delicious for me. It wasn't too sweet at all, that's why I finished two plates of it 😅.
