Welcome back! Life gets so busy sometimes, especially with the kids school time, work and home chores. I totally understand how hard it is to manage time.

Your eggplant recipe sounds delicious and easy to make. I can imagine how tasty it is with rice. I like how you washed you vegetables with dish soap, especially if we are not sure about pesticides. I'm excited to hear more of your stories next time.
