Nice to see you wanting to get back into shape again... for myself i like todo the the road cycling and the occasionally gravel bike.

About the choice it all depends, do you want to hit the single tracks then some suspension is useful. If not, I know Canyon also has some sweat urban bike that are more for commuting.
Price tag might be a bit higher but I loved to commute to work on this bike sold my for 1000 Euro (so maybe used bike from markplaats (dutch website)):

But also cube has some nice affordable setups, then its indeed good to look at the group set imho do not go for the top once because way to expensive but also not the cheapest. For road cycling you have Sora/Tiagra/105/ultegra/dura-ace i personally would now go for 105 but.

Hey there thanks for your response :) I too will be mainly cycle on roads, I've decided I will just go to my local bicycle store later today, I took a peek a couple of weeks ago and they have some cool bikes for sale now. I think in cases like this it's better to be advised by someone with knowledge rather than just buy on the internet, also what size I need and all that especially now I'm still a total noob, I'm a skating veteran but this is a whole new world.
