I've never tried installing an AI locally before, though I've read that it's possible even on older machines, but it probably takes a lot longer to run. There are tons of them here: https://huggingface.co/models
As for privacy, I use duck.ai (I think it used to be a search engine).

If you install a small model with not so many parameters and you have enough vram on your computer, the ai can be much faster than what you get online. But if the machine is old, it will heat up and be slow :-)

Right now, I'm using an AI plugin (OpenVivo) for Audacity (free music software) that separates the stereo audio track into individual instruments. For a 3-minute track, it needs 10 minutes to separate the track into 4 channels: vocal, guitar, bass, other instruments.
I have 12th Gen Intel(R) Core(TM) i7-12700 (2.10 GHz) and 32 GB Ram. Without a graphics card, I'm using integrated Intel. Probably I need to buy some NVidia monster :)
