Asparagus Fritatta

Hello, chefs! 😋

How's the cooking? I believe it's going well because the Foodie Be Hive community is full of interesting cooking tips and recipes from around the world.
I've also accumulated a lot of food-related content over the last few months, so it's really high time I shared some of my recipes with you.

This time I have prepared, again, as usual, something simple and quick. Fritatta is a very popular dish in our region, it's prepared with different ingredients, the base is scrambled or beaten eggs, and it's most delicious with seasonal vegetables. In our country, we prepare it for breakfast or dinner, but of course, you can eat it any time.



The asparagus season is over, but as I mentioned, this recipe is from May, when we were picking fresh asparagus in the field.

My recipe for asparagus frittata (for one person):

  • two eggs
  • one bunch of asparagus
  • one young onion
  • one bunch of chives
  • a tablespoon or two of olive oil
  • salt, pepper if necessary


I would also like to mention that all the ingredients are fresh, from my own, home-grown field, where we use absolutely no pest or weed control products, nor any artificial fertilizers.
The eggs are from my mother's domestic hens, which are outside in the garden. 🐔

Start by whisking the eggs well and add the chopped bunch of chives. The chives go well with the eggs, adding a mild garlic flavour.

Wash the young onions and the asparagus bunch. Cut everything into small pieces.


As I mentioned before, you can put a lot of different things in a frittata, and you can prepare it in different ways, but I find it tastes best with the fresh, seasonal vegetables that are available at the moment.

All the ingredients are now ready for frying.

Heat a tablespoon or two of olive oil in a frying pan. At the same time, add the sliced spring onions and asparagus. Fry for a minute or so in the hot oil, stirring at the same time. Nothing must burn.

Reduce the heat and add the scrambled eggs with the chives. Fry for a few more minutes on a lower heat, stirring occasionally and turning the mixture once. Season with salt and pepper if necessary.
When the eggs have been set, the dish is ready.


Now we just serve.
Best with fresh bread or some fresh vegetables.

That is a dish I would eat every morning for breakfast. Healthy asparagus and good protein. Looks yummy!
I love asparagus in all variations and did even make a raw asparagus salad once. My favorite way is when you fry it and it gets a little nutty taste to it.

Yeah, I love asparagus, too. Five years ago we planted on the field 10 plants. It takes two years to harvest something. But last three years we have enough for season. Almost each few days a kilo. :)

A few kilos? I'm jealous now. That is one thing we did not plant on the field, but if you say it takes two years, we can't do it anyways. The field is rented just for the season per year.
