Escalope viennoise

Salut à tous, une escalope de veau panée avec une garniture d'oeufs dur haché, de câpres, d'anchois et d'olives verte.

Préparer les garnitures en séparant les blancs des jaunes avant de hacher les oeufs, et en enroulant un filet d'anchois autour d'une olive.

Paner les escalopes en les passant dans la farine, puis dans de l'oeuf battu et dans la panure.

Mettre à cuire les escalopes dans de la matière grasse à feu moyen, la cuisson du veau ne doit pas être trop forte sinon il va durcir.

Une fois cuite, mettre les condiments en cordon et déposer l'escalope, poser dessus les olives entourés d'anchois.
